Chocolate...never ending story (and glory)

     According to Wikipedia, the history of chocolate begins in Mesoamerica. Chocolate, the fermented, roasted, and ground beans of the Theobroma cacao, can be traced to the Mokaya and other pre-Olmecpeople, with evidence of cacao beverages dating back to 1900 BC.
     At the beggining, it was a simple drink, rustic and bitter, allowed only to "special" people, and priests during sacred ceremonies. 
     Then the time passed, and the Europeans sweetened and fattened it by adding refined sugar and milk, two ingredients unknown to the Mexicans. By contrast, they never infused it into their general diet, but have compartmentalized its use to sweets and desserts (which nowadays doens't seem a bad idea, I must say).
     The fact is that with time more and more people got interested (and almost addicted) to chocolate, so it was a great motive for the development of the chocolate industry. 
     From small Chocolateries (as we see in France, Belgium, etc) to big world-known chocolate makers, they've all improved looks, taste, types and techniques. Of course one should say that the chocolate produced by a small Brugge chocolate shop with an old lady working on it is much better than the " big scale produced" chocolate. And of course that is true. BUT one cannot say that the big ones aren't trying their best to catch up. Proof of that are the pictures below: 





      Mixing new techniques and new ingridients, those chocolates are not bad at all. Actually they're really good, indeed. It was the first time I've tasted Fleur de Sel, and it really goes well with caramel and chocolate. Crunchy, not too sweet and delicious. 
     The figs, caramel and dark chocolate combination is something that simply cannot go wrong. And it didn't. In a creamy filling, it is even better. Wonderful!
     In the end of the day, what really matters is to appreciate something that is delicious to you, and you don't have to worry: delicious and chocolate are words that it's almost impossible to separate!
